Gaining weight on low-calorie diet

My weight has fluctuated over the years, but since age 17 I’ve gone from ~140 lbs to 190 lbs. Low calorie diets used to work, as last summer I ate a healthy, low cal diet and got down to 165. I recently went sober after I got back up to 190, and over the last few weeks I’ve been using the treadmill (mostly walking, jogging sometimes) on days that I can, not eating fried food (I’ve only eaten greasy food once in the past 2 months), drinking lots of water, eating very slowly and eating about 900-1200 calories per day. My weight’s stayed stagnant over the last 2 months. How do I start losing weight? I’ve read I should probably go up in calories since my metabolism is probably low, but I’m not sure how to go about it. I’m scared that if I go over 1200 I’ll just end up gaining weight. This isn’t a healthy weight for me anyway, I’m a 5’3 21F
