Does being healthy mean going gluten free?

I went to see a nutritionist, who was adamant that I should be gluten free. She was very against all purpose flour and anything with wheat. She said going gluten free would not just make me feel better but help me lose weight.

She also suggested a 3 weeks body reset where I would eliminate anything processed, grains, dairy and sugars.

Is this normal? Is this what being healthy is supposed to be? Is this sustainable for most people?

I’d like guidance and support for healthier eating habits. The nutritionist said she wouldn’t take me as a client unless I gave it up. This was even after I said I don’t see this change being a long term commitment for me.
